The Coeliac New Zealand (CNZ) ‘Dining Out Programme (DOP) is a gluten free training and accreditation programme for the hospitality and catering industry to ensure gluten free (GF) food is produced and served safely for diners who have coeliac disease or sensitivity to gluten. A wide range of businesses can become DOP accredited including restaurants, cafes, delis, canteens, bakeries, hospitals and educational facilities. The DOP consists of 2 main elements, an online training programme for staff and an independent, gluten free audit. Once DOP accredited, the business works closely with CNZ to promote the accreditation to GF consumers and to continue to provide GF best practice, gain competitive advantage, add a loyal GF customer base and increase their GF income.
